Yeast comes in three main forms — active dry, instant (rapid-rise), and fresh — and they are not interchangeable at equal volumes. 1 teaspoon of active dry yeast equals 0.75 teaspoons of instant yeast, because instant is more concentrated. The formula

instant (tsp) = active dry (tsp) × 0.75
active dry (tsp) = instant (tsp) ÷ 0.75
fresh (tsp) = active dry (tsp) × 3
packets = active dry (tsp) ÷ 2.25   (1 US packet = 2.25 tsp)

Practical examples

Example 1: A recipe calls for 1 packet of active dry yeast. How much instant yeast do I use? 1 packet = 2.25 tsp active dry × 0.75 = 1.69 tsp instant (use 1¾ tsp)

Example 2: I only have fresh yeast. A recipe needs 1 tsp active dry. 1 tsp active dry × 3 = 3 tsp fresh yeast (≈ 6 g fresh)

Example 3: A recipe calls for 2 tsp instant yeast. How many packets of active dry is that? 2 ÷ 0.75 = 2.67 tsp active dry ÷ 2.25 tsp/packet = 1.19 packets (just over 1 packet)

Common mistakes

Proofing instant yeast. Instant yeast does not need to be proofed (dissolved in warm water first). Adding it to warm water won't hurt, but it wastes time — unlike active dry yeast, which traditionally benefits from proofing to verify it is still alive.

Using expired yeast. Yeast that has passed its date or been stored at room temperature too long may not rise effectively. Test by dissolving ½ tsp in ¼ cup warm water with ½ tsp sugar — if it foams within 10 minutes, it is still active.

Ignoring water temperature. Yeast is killed by water above roughly 49°C (120°F). Optimal proofing temperature is 38–43°C (100–110°F). Cold water slows (but does not kill) yeast, making rises longer.
